Hints

Best results are obtained by washing and draining sultanas, raisins & currants then blending with glace cherries, mixed peel, glycerine and small quantity of alcoholic or non-alcholic liquid.  Place into a plastic bucket or container, cover and leave overnight.  You can soak your fruit for longer, continue to feed fruit mix with alcohol every 2nd day, remembering to mix the fruit and alcohol before sealing container.

For Dundee cake, decorate top of cake with blanched almonds, before baking.  Glaze with boiled apricot jam.

Baking times and temperature will vary from oven to oven and the size of the baking tins used.  Always grease and paper line your tins.
