Bakels Vegan Blueberry & Lemon Muffin Recipe

Create healthy and delicious blueberry and lemon muffins using the Bakels vegan cake mix and some frozen blueberries.

Ingredients

1kg Vegan Cake Mix

310ml Water

240ml Vegetable Oil

17g Apito Lemon Flavouring Paste

300g Blueberries (frozen)

Method
  1. Preheat oven to 190 degrees

  2. Add cake mix, water, and vegetable oil into a mixing bowl and beat on low for 1 minute

  3. Scrape down sides of bowl and mix on medium for 6 minutes

  4. Add blueberries and lemon flavouring paste, mix on low for 1 minute

  5. Scale 100g into muffin tins

  6. Bake for approximately 25 minutes

  7. Leave to cool in tin and then place onto a cooling rack

Hints

Be careful not to overcook, cooking for longer at a lower temperature can help with this.

Cooking times vary for larger tins and cooking times vary with ovens.

Always grease & paper line tins.
