Bakels Multi Cookie Mix Recipe

From chewy to crunchy and all sorts of cookie add ons like sultanas, chocolate chip, rum and raisin, apricot and coconut, the list is endless with what you can bake with this super versatile multi cookie mix that should be a regular staple in your pantry.  

Bakels Multi Cookie Mix is an easy to use cookie mix, perfect sugar cookies every time, ready for covering in fondant, royal icing or simply plain.  Regardless of how you finish them, they are a divine treat!

Ingredients
Group 1

1kg Multi Cookie Mix

250g Unsalted Butter

 

Group 2

3 x 70g Eggs

 

Group 3 - Optional Extra Add Ins

Apricot and Coconut: Add an extra 25g egg, 175g chopped apricots, 100g fine coconut and 50g water.

Rum and Raisin: Add 300g chopped raisins, 25-30ml of rum of your choice.

Jaffa: Add 300g chocolate chips and 1-2 tsp orange baking emulsion and/or grated orange rind.

Lemon and Sultana: Add 300g sultanas and 1-2 tsp lemon emulsion.

Pecan and Coffee: Add 300g chopped pecans and 1-2tsp coffee emulsion or 1 tablespoon of espresso coffee.

Double Choc: Add 30g cocoa, 50g water and 300g chocolate chips.

Cherry and Almond: Add 150g chopped cherries, 150g flaked almonds and 1-2 tsp of almond emulsion.

Date and Walnut: Add 50g water, 150g chopped dates and 150g chopped walnuts.

Method
  1. Blend Group 1 together on low speed until well mixed.

  2. Add Group 2 and combine until egg is combined, then adding Group 3 if you wish and combine until mix is altogether, being careful not to overmix.

  3. Set your oven temp to 180 degrees Celcius

  4. Bake for approximately 12 minutes

Hints

- Cooking times vary between ovens, please adjust the baking time accordingly.   

- The colder the dough when baking, the better the cookies hold their shape. 

- Over mixing can make your cookies spread during the baking process.

- To maintain freshness and best results cookies should be over-wrapped or bagged on the day of baking.

Note: The yield noted really depends on how thick you roll the cookies and will vary depending on the style of cookie you are baking.
