Marshmallow Bunny Recipe

Marshmallow Bunnies are an old Australian tradition and are often seen in corner stores and on dessert tables at Easter shows and fete's.

 

Although they are somewhat retro now, they will always remain one of our favourite Easter traditions as kids.

Makes 1 x Big Daddy Bunny and 6 x Junior Bunnies
Ingredients
  • 3 tsp Gelatine Powder
  • 125ml Hot Water
  • 60ml Cold Water
  • 150g Castor Sugar
  • 10ml Vanilla Essence or any other desired flavouring (strawberry, banana or peppermint are some delicious ones!)
  • Drop of food colouring as desired
Method
  1. Place the sugar and cold water into a large bowl and beat for 5 minutes with an electric mixer

  2. Add the gelatine to the hot water and stir briskly until dissolved

  3. While the gelatine mixture is still hot, add it to the sugar solution and beat on high speed until the mixture is very thick and white- approximately 10 minutes, or until the mixture will hold a figure 8

  4. Add desired flavour and colour - beat until combined

  5. Grease your marshmallow moulds with shortening or with a non-stick cooking spray. Pour your mixture into chilled moulds and refrigerate until firm

  6. Run the tip of a knife around the edge of the mould. Gently ease the marshmallow away from the side of the mould and place on a serving plate

  7. Decorate with colours for the ears and eyes and coconut for the bunnies fur
