Gluten Free Baking will never be the same once you've tried this versatile Gluten Free Utility Cake Mix recipe.  Using the base gluten free utility mix you add your own choice of flavourful ingredients such as banana, apple, carrots, sultanas and so many more.   The gluten free utility cake mix recipe works well as a whole cake and cupcakes for extra versatility. 

 

Gluten Free Utility Cake Mix recipe is produced in a nut, wheat and gluten free environment there's nothing artificial and they are preservative and colour free.

Ingredients
 Group 1 Ingredients

1Kg Gluten Free Utility Cake Mix

220g eggs

280g canola oil

280ml water

 

Group 2 Ingredients

Banana 200g

Carrots 200g

Walnut 50g

Apple 200g

Sultana 250g

Fruit Cake Mix 500g

Light Fruit 250g 

Method
  1. Mix Group 1 ingredients on speed #1 until blended

  2. Scrape down mixing bowl

  3. Restart mixer at speed #1 for further 1 minute

  4. Optional: Add your choice of Group 2 ingredient and fold in gently

  5. Place batter into greased 20cm/8 inch round cake tin

  6. Bake at 180C for Cakes 50-60 minutes

Baking time for light fruit cake is approximately 1 hour

Baking time for heavy fruit cake is approximately 1hr 45 minutes

Hints

Baking instructions are to used as a guide only and baking conditions will vary from oven to oven. 

Always grease & paper line tins.

Banana cake, crush bananas in mixer before adding other ingredients.

Do not add frozen fruit or other frozen ingredients.

Almond meal or hazelnut meal may be added at 10% dry mix weight for added flavour.
