With 'By Caitlin Mitchell' Coloured Royal Icing, previously branded as Menina, you will never have to make red or black royal icing again! Perfect for medium to fine piping, shelling & frosting work. Menina Royal Icing contains agents to eliminate shrinkage during the setting process, accompanied with extensible properties and a delicate flavour.


By Caitlin Mitchell Royal Icing comes with full instructions and is proudly made in Australia.


Don't be fooled by the light colour of the Royal Icing powder. When the powder is wet, the icing will darken close to the final colour. As the Royal Icing dries, the colour will darken to be pure black or red. 



  1. For stiff peak, shell border piping, frosting and stencilling, add approximately 18ml of water to 100g of Royal Icing.
  2. For fine piping, writing, run out work and cornelli work, add approximately 22ml of water to 100g of Royal Icing.
  3. Add Royal Icing powder to the mix until the right consistency is achieved.
  4. Do not overmix.
  5. Colour will darken as it dries.
