Coffee cakes originating in Germany are often topped with a streusel topping or cinnamon however are not usually iced.  A light coffee flavoured cake is a ideally served with a freshly brewed espresso or latte for a relaxing morning tea.  Often not as sweet as a chocolate cake is more suited to those that prefer a less sweet treat.  The Bakels Gluten Free Health Baking Mix is the perfect base for making this delicious recipe it's not only yummy to eat but being gluten free is also perfect for anyone requiring a gluten free diet.

Ingredients
Group 1

125g Butter

125g Caster Sugar

 

Group 2

175g Eggs

 

Group 3

325g Bakels Gluten Free Health Baking Mix

10g Instant Coffee (dilute with water before adding) 

 

 

Method
  1. Beat Group 1 until thick

  2. Mix Group 2 and add to the above

  3. Add Group 3 and blend in

  4. Bake at 170C for approximately 60 minutes
