You’re not the only one who has seen the Euro Flour in our store and wondered what the T55 means.
Here is a quick rundown of T55 flour and what it is.
People can tend to think that the T is the protein grade. It isn’t. French flour types measure ash content (the amount of ash left after burning the flour).
Basically, the lower the number, the white the flour and the higher the number, the closer it is to Wholemeal.
Each flour has a different use for each bread type.
One is good for rustic breads and loaves with pronounced flavours. Others will be best for sourdough, pizza bases, and so on and so forth.
| Flour Type | Ash Content (%) | Colour / Refinement | Common Uses |
|---|---|---|---|
| T45 | Approx. 0.45% | Very white, highly refined | Pastries, cakes, brioche and delicate baking |
| T55 | Approx. 0.55% | White, refined | Baguettes, white bread, pastries and general baking |
| T65 | Approx. 0.65% | Creamy white, slightly less refined | Artisan bread, baguettes and rustic loaves |
| T80 | Approx. 0.80% | Light brown, semi-wholemeal | Rustic breads, sourdough and country-style loaves |
| T110 | Approx. 1.10% | Brown, minimally refined | Wholemeal-style breads, hearty loaves and sourdough |
| T150 | Approx. 1.50% | Dark, wholemeal | Wholegrain breads, dense loaves and high-fibre baking |
