Black cocoa powder is simply a cocoa powder that has been heavily 'Dutched' or alkalised to a pH level of 8. Black Cocoa Powder has 11% Cocoa butter content.
For an excellent outcome when baking, we recommend that you use 2/3 of our Premium Dutch Cocoa and 1/3 Black Cocoa in a recipe. This will retain the moistness integrity of the cake.
